Who are Those Fit People?

Many people watch the informercials of workout DVDs and are intimidated by what they see on the TV.  They see very fit people jumping around at a high speed, doing squats, push-ups and all the other exercises we hate at a high rate of speed.  The fact is….these really fit people all have something in common with you….they all started somewhere.  They all have families, and jobs, just like you do. Some of the people that are featured are chosen to be in the videos simply to show you correct form of the exercises featured in the DVDs.  Others are chosen because they did well with the test group, and had incredible results.

What they don't show you in those infomercials is that most of today's DVD workouts put out by Beachbody have a modifier in them.  In P90X, TurboFire, and Focus T25,* there is someone doing a modified version of the exercises. Beachbody realizes that not everyone is at the same fitness level, so a modifier is provided.

So, as we end 2013, and our New Year's Resolutions are made for 2014, consider one of our workout programs to help you meet that goal.  There are so many to choose from, for every fitness level, and desired goal.

And with P90X3 out, you can reach that goal in just 30 minutes a day.  With 16 different workouts, you'll never get bored.

Let me help you make those Fitness Resolutions come true this year!  2014 is your year to a healthier, more fit you!

*Of the Beachbody programs that I've done, those are the only ones that show a modifier. I have not done all of the programs, so I can not comment on them.  As with any Beachbody fitness program, the exercises can be modified to fit your fitness level, and I encourage you to do so.

I Can't.

The most frustrating thing I hear from my friends and family whenever I talk about a fitness program is: "I can't."  And if you ask my husband, I use to be that person.  When he started Insanity, he begged me to do it with him.  I would always answer him with "I can't because…." and then list a ton of excuses.  My excuses were anything from my bad knees, to my aching ankles, to just being tired, to not having enough time.  I would watch him do Insanity and think: that's just too much.  I would watch and think, "I could never do that."

Then one day it happened.  I picked up my husband's P90X and pushed play.  I was completely unaware of what I was going to get myself into.  P90X started me on a completely new journey.  It was the first time I heard what you don't hear on the informercials, "Do your best, and forget the rest."  That one statement changed how I felt about Beachbody's DVD fitness programs.  The instructors with each program always emphasize form over speed.  I can not count how many times I've heard that on the various programs that I've completed.

I want to help you turn your can'ts into cans.  I want to give you a reason to know that even you, with any injury, can find a program that will help you get stronger, get fit, and get healthier.  I threw my excuses out the window once I learned that I could do the programs, and I'm here to help you do the same.  There are tons of programs available, for any age, any fitness level, and any goal.  Whether you want to lose weight, gain muscle, or just get more flexible, Beachbody has a program for you.

The Beginning to the New Me.

Hello everyone!  So, I'm going to share with you a success story.  This story starts in the summer of 2010.  I ordered a pair of shorts from the Old Navy online store, in a size 10.  That was the last summer that I wore those shorts.  In the winter of 2011, I moved from Georgia to Germany, and then deployed to Afghanistan.  When I got home from Afghanistan, I pulled the shorts out of the closet, and I couldn't wear them.  I mean, I couldn't even lay down on the bed and to button them!  They were SO tight.  I didn't want to believe that I've gained that much weight, but apparently I did.

I lied to myself for months.  Reality hit when I was looking at pics that I was tagged in from a friend's birthday party.  I looked FAT.  But, I didn't want to admit it.  So, I stopped wearing the shirt, for a little while anyway.  I thought it was just my clothes that made me look that way. I've lost accountability of myself.

So, things really became critical when my career, and my chance of getting promoted was starting to fall through my hands....all of this because of some weight.  See, being in the Army, you are supposed to weigh a certain amount, and when you are over that, you get taped for body fat.  If your body fat is too high, then you are entered into the Army overweight program.  I was never there, just too close for comfort.

Anyway, I had to get my butt moving, and fast.  I was losing control.  The first thing I did was pulled Insanity off the shelf.  I saw how it worked for my husband, and he was about to start another round.  (He'd fallen into the same trap that I had, and gained a lot of weight during my deployment.)  Even with a permanent foot injury, I was able to modify the exercises to fit my needs.

Anyone who's ever completed a BeachBody program knows that at the end of each video, they advertise upcoming programs and Shakeology.  Well, the Shakeology got me curious.  I wanted it, I just couldn't afford to pay for it.  My friend Jozel, who I've known since 2010, told me that I could become a BeachBody Coach for free, and that would get me the discount for Shakeology.  That, put Shakeology in my reach.  I immediately ordered it, and within 36 hours of taking it, my digestion improved greatly.  My sugar cravings went away, and my energy went up!

By this time, I had ordered TurboFire, and had started on that program as well, and instantly fell in love with Chalene Johnson!  Her energy and motivation was enough to keep me going.  And I did.  And 90 days later, I felt better, looked better, and was a changed person for life.  I wanted more.

And here we are today.  I just started my third week of Focus T25, and those shorts that I couldn't wear when I returned home from Afghanistan....they fit now.  Actually, they fit better than what they did when I first bought them!

So, now that I'm on this path that has changed my life, why not join me.  Like my FB Page.  Learn how I can help you reach your fitness goals.  You'll feel better that you did!

Infomercials, and The Lies That They Promise.

By now, most people have seen informercials on just about anything.  You can cook a meal in just a few minutes, lose weight with a magic pill, get a hose that magically shrinks as it empties, buy hair and make up products that will make you look like a beauty queen, and just about any cleaner that 'naturally' cleans your entire house....all with the power of steam.

Most people fall into the trap of instant gratification products, as I did.  I've purchased the device that shocks your abs into the six pack that everyone wants.  I've also purchased the steam cleaners, juicers, indoor grills, and workout DVD's all with the promise that I'll have a cleaner house, a healthier body, and better digestion.  While most products can be seen as scams, and we know as scams, everyone wants that instant gratification feeling.  We want to instantly lose weight without actually doing any work.  We want to instantly clean our homes, and we want to instantly cook a meal.

But here's the deal:  To get what you want out of life, you have to work at it.  You have to put effort into cleaning your home, cooking your meals, getting and staying healthy.  I hate to be the bearer of bad news, but you have to work.

While some of the products do work, most do not.  I love my George Foreman Grill.  I also love my Shark Steam mop!  Those products actually work.  I've made the best tasting pork chops, and had a super clean floor in no time!  But, other products, like Hydroxycut and the Ab Shocker do not work.  To get those abs that I want, and to lose these extra 15 lbs, I have to work....not take a magic pill and shock those muscles.  (While shock therapy is a good form of physical therapy, I don't recommend it as a way to get fit.)

So, to get fit, I chose Beachbody.  Why?  Well, for one, they offer a ton of different variety of exercise programs that you can choose from.  From intense cardio, to body building, to flexibility, to yoga, there are several programs for just about every personality out there, and every age group.  Second, they offer online community to help motivate you to get healthy.  You can join a challenge group, or start one yourself.  And, once you've received successful results, if you decide, you can become an online coach, to help other people become successful in their fitness goals.  It's all about finding what's right for you, and helping others achieve the same results.

So, if you are interested in becoming fit, let me help you achieve those goals.  I can help you choose the program that's right for you.  Don't rely on instant gratification products that are sold on informercials to help you reach your fitness goals.  You are only throwing your money away.  (Trust me, I know.)  Message me, and I can help you choose a program that fits you....your fitness goals, all within your budget.

Introducing Turbo Jam, Rockin' Body and Hip Hop Abs

I want to take a moment to introduce to you Turbo Jam, Rockin' Body and Hip Hop Abs.

Turbo Jam is the predecessor to TurboFire (which I love!) that was created by Chalene Johnson.  It features Dance, Kickboxing, and core exercises to get you fit, fast.  It's a great workout for beginners.  It comes with a eating guide, so that you'll get great results even quicker.  And if the music is anything like it is in TurboFire, then you'll love that too.

Now, let's talk about Rockin' Body and Hip Hop Abs.

Rockin' Body was created by choreographer Shaun T.  It was one of his first of his dancing workouts along with Hip Hop Abs.  It features dance moves that are designed to work your core, and to help you lose weight.  It's not only features dance music, but Disco and Rock as well.

Hip Hop Abs was also created by Shaun T.  This was his first workout, created to show you that you don't have to do crunches in order to get the abs that you want.  Shaun T. teaches you how to work your core muscles and have fun at the same time.

The reason that I'm talking about these workouts is because many people are intimidated of workouts that have a quick pace to them.  Well, I'm here to tell you to not be.  Like TurboFire, once you do the DVD once or twice, your body quickly learns the moves, knows the cues of when it's going to change, and the next exercise sequence that is coming up.  Don't ever purchase a DVD workout and expect to do it 100% correct the first time through.  You have to give yourself a learning curve.  Believe me, you'll learn them soon enough.  The first few times that I did Fire 40, (from TurboFire) I was lost, and discouraged....but once I got the moves down, Fire 40 quickly became my favorite workout out of the entire series, and I'm sure you'll find your favorite too with Turbo Jam!  And learning the moves doesn't take as long as you think.  As long as you are trying, and not standing there saying, "I'm lost," then you are burning calories.

Don't be intimidated by a fast paced DVD workout.  You have a pause button.  Use it, but use it sparingly.  The main idea is to get yourself moving.

The point is, you can have the body you want if you are willing to invest a little time, a little effort, and a little money, and absolutely NOT feel as though you are working out, but rather dancing your way into fitness.

If you want more information on these, or any other workouts featured by BeachBody, contact me.  I can help you choose your first, or next workout program to help you reach your fitness goals.

My Success so Far!

Well, I'm a little over 60 days of TurbuFire and my results still amaze me.  Let me share with you what I discovered just this morning.

I lost 7% body fat.
I lost almost 6 inches overall, with 3 lost in my waist alone.
I lost 5 pounds.
I have definition in my legs, arms, and waist.
My clothes are baggy, everywhere.
I have more energy.
I feel better.
My resting heart rate is of that of an athlete (for my age, and sex.)
And, my blood pressure is lower. (Time to talk to doc about lowering that medication.)

So, how did I get here?

First, I chose a fitness program that I would enjoy, and stuck with it.  I had completed a month of Insanity when I injured my ankle.  While on recovery, I received TurboFire in the mail, and slowly started TurboFire after my ankle healed.

Next, I joined a Fitness Challenge Group.  Even on my non-motivated days, the people in the group are always motivating me with their posts, pics, and status updates.  I logged in daily, posted my own stats and pics, even though I didn't always look my best.  Ok, I never looked my best, but neither does anyone when they are sweaty all over, and just took a pic.

Then, I incorporated Shakeology into my diet.  I drink it every day for breakfast.  I add fruit, a soy or almond milk, and sometimes peanut butter.  This increases the calories a little bit and fills me up like a meal would.  It also aides in digestion, keeps me from craving sweets, and provides me with vitamins and nutrients not found in any other meal replacement shake.

Finally, I changed what I eat on a daily basis.  I added more fruits and vegetables to my diet, buying fresh or frozen most of the time.  The only canned veggies that I purchase is tomatoes (crushed, diced, stewed, etc).  Sometimes I'll purchase canned beans, but I always rinse them before using them.  I eat more fish that contain Omega 3 fatty acids, lean meats, and will occasionally enjoy a vegetarian meal.  I eat 5-6 meals a day, choosing fresh fruit, good nuts, or veggies as my snacks.  And, I drink 60-80 ounces of water almost daily.  Fitness experts recommend 1/2 your body weight in ounces to drink daily.

That's it.  Four easy steps to fitness success.  Nothing less, nothing more.  And, as a Team Beach Body Coach, I want to do the same for you.  I want you to enjoy the same success that I have.  I want you to feel your greatest, and to look the best in your clothes.  My question is to you is: do you want it?

Send me an email and I'll help you get started.  I'm here for you. No matter your fitness level, your finance situation, or how much free time you *think* you have in a day, I'm here for you.  I can help you find the program to fit your lifestyle.  All you have to do is contact me.

Working Out at Home vs. the Gym

As I finished my TurboFire workout this evening, I tried to remember when was the last time I actually enjoyed going to the gym....and well, that was 20 years ago, when I was in high school.  Then, I decided to do a pros and cons list on working out at home vs. going to a gym.

So, without further ado, here are my thoughts on the issue:

Going to the Gym:
Pros:

1) Tons of Equipment
2) Most have swimming pools
3) Personal Trainer Available
4) Group Classes available
5) Sense of community
6) Additional Amenities such as Sauna, Steamer

Cons:
1) Costly
2) Gym equipment is dirty
3) Shared showers
4) Often times you have to wait for equipment
5) Personal Trainers often cost extra

Working out at home:
Pros:

1) One time cost of equipment/videos/etc
2) Work out in the privacy of your own home
3) No commute to gym
4) Don't have to hire a baby sitter/arrange for child care
5) Changing workout programs is affordable
6) Most workout programs come with online support and eating plan, helping you get your best results

Cons:
1) No sense of community.
3) Buying an upgrade of weights can be very expensive.

Ok, so there you have it, my Pros/Cons list of working out at a Gym vs. working out at home.  Each person has their own preference of where they want to work out, just like each of us has different fitness goals in mind.  For me, I choose to work out at home with DVD's and the equipment that they provide because I'm a private person.  I hate the feeling that I'm being judged because I'm not running fast enough, or lifting heavy enough.  I hate the awkward feeling of looking at a machine and thinking, "Um....how do I do this?"  I really hate waiting in line for a machine, and most of all, I actually hate being in a classroom setting (except Spinning) for kickboxing, step aerobics, etc.  I'm uncoordinated.  And last, but not least, I hate walking into a gym and feeling that it should be a fashion show.

If you're like me, then you should take a look at the tons of BeachBody programs that are available.  There are programs for any fitness level, and for any fitness goal.  If you want flexibility, to lose weight, or to gain muscle, BeachBody has it all.  Additionally, BeachBody supplies online support, a customized eating plan, and a coach to provide motivation to help you reach your goals.  You can browse my website for any workout program to fit your needs.

If you're not like me, and you want to work out in the gym, then get out there and find a gym for you.  The most important part about getting fit, and staying there, is you HAVE to find something that works for you. Once you find something that you enjoy, then make the decision to commit to it, then you'll get results.  And most of all, find something that offers some sort of a support group.  Without a support group, who do you have to share your accomplishments and setbacks with?  A support group can also give you tips, and ideas for improvements.

Good luck on reaching your fitness goals.  Please feel free to message me if you need advice on a BeachBody program, or if you just want general information.

NO EXCUSES!!!

Good Evening Readers!

All too often I hear many excuses for not working out, and I'm here to tell ya, there are NONE.  Nope, none what so ever.  In the last 36 hours, I had 24 hour duty, and I worked out not once, but twice.  Well, most people wouldn't think that is such a big deal, BUT, and here's the kicker.....we are in the middle of a trans-atlantic move.  Yep, it's that time again, and there is SO much planning going on.  Yesterday, we packed our 90 day suitcases, our necessary electronics and important papers that we need to hand carry.  Today, after my 24 hour duty, the movers came, and we had to supervise the packing.

So, what did I do today to work out?  I set my computer up on top of my already packed TV, put my TurboFire DVD in, and pushed play.  Yep, absolutely NO EXCUSES.

TURBOFIRE HIIT 15 DVD IN, READY FOR ME TO PUSH PLAY.

So, what do I want you to do?  First, you need to like my FB page so that you'll know what events are coming up, what's on sale, as well as get motivation that you need in order to get healthy.  Second, you need to visit my Team Beach Body Page so you can order a TurboFire Challenge Pack.  They are on sale for the entire month of August.  With the savings, and the 30 day money back guarantee, you can't go wrong.

TurboFire is a high intense, kickboxing workout that'll keep you motivated while kicking your butt.  You'll look forward to the workouts because they are SO much fun, and the music will keep you pumped!

I want you to be fit!  Why?  Well, because you'll feel better.  Not only physically, but your mood will improve.  You'll crave less junk food, and make wiser food choices because you won't want to undo all your progress from working out.  AND, you'll look better.  Now, who doesn't want to look better?

So, what are you going to do?  You are gonna like my FB page, visit my website, and choose a program (if not TurboFire) that'll get you where you want to be.  And I, I will be here to motivate you EVERY step of the way.  That is my promise to you!

Four Weeks Complete

Ok, guys and gals....many of you are probably wondering how I'm doing on my amazing transformation, and let me tell you, I'm quite excited about what's happened so far.

After 4 weeks of TurboFire and 3 weeks of Shakeology, here are my results:

- Lost 6 pounds
- Lost 5 inches overall
- Lost 4% body fat

TurboFire and Shakeolgy both come with a diet plant, which I do not follow.  I don't follow them mainly because I live in Germany, and it's difficult for me to find all of the foods here.  Two, it's not cost effective for my family while in Germany.  What is cost effective though is just eating clean, which I am able to do.

I'm sharing this with you because I want you to have the same results.  I want you to be successful in finding a New You.  I want you to decide to change your lifestyle to have a healthier future, not only for you, but for your loved ones.  So, are you ready?

First, to get started, you should choose a program.  If you want to lose weight, then you should try TurboFire.  If you want to gain muscle, then you should try Body Beast.  Both programs are on sale this month as a Challenge Pack for $160.  What's in a Challenge Pack you ask?  Well, let me tell you.

A Challenge Pack contains the program, starts you on your Home Direct delivery of Shakeology, and a 30 day membership as a BeachBody Club member where you'll get tons of advice, a diet plan to help you reach your goal, and mentorship from tons of people who are all trying to reach the same goal that you are.....to get healthy, and End the Trend of Obesity.  If purchased separately, TurboFire or Body Beast and Shakeology would cost you over $200.  Once you have Shakeology on Home Direct delivery, you'll receive it automatically every 30 days, and not have to pay s/h.  For $129.95, the healthiest meal of the day comes to just about $4 a day.

For more information on either program, please click on the links below.  Or, email me here!

I encourage each of you to get serious about your fitness, decide what you are going to do, commit to it, and I can help you succeed.

I look forward to helping you reach your goals.

Three Weeks Complete!

Ok, so I've completed 3 weeks of TurboFire and 2 weeks of Shakeology, and I've seen results. Great results!

The other day, my husband put his hands around my waist and was impressed of how solid my waist felt.

I have pajama pants that I haven't worn in awhile because they were too tight, and now they fit just right.

The bloaty feeling that I had because I wasn't regular, well, that's gone.  What I thought was normal for me, really isn't apparently, and I didn't know any difference.  Now, I'm going to the bathroom more frequently, and I feel better because of it.

My tastebuds have changed. Sweets taste weird to me, and I don't crave them.  I'm not saying that I don't like them, because I do.  I don't feel that I 'need' them like I did before, and when it's a special occasion, I do enjoy, I just don't indulge.

I sleep better.  I actually feel rested when I wake up.

And, TurboFire is addicting!  I look forward to my next workout.  I've never done that before.  I surely don't look forward to PT with the Army, never have.  I enjoy working out in my home.  I enjoy seeing the results.  I am enjoying this new lifestyle of getting healthy and fit.

What Shakeology and TurboFire have done for me! part 1

Ok, so I have to share this.  I'm week 3 into my 90 day transformation, and I must say, I've already seen incredible results with TurboFire and Shakeology.

I don't want to share all the results now, but what I will say is that they are INCREDIBLE!  For the first time ever, I HAVE ABS!  Yessir!  Even when I was 19 and pre-baby, and as skinny as a stick, I didn't have abs, and at the time, I was FIT.  Now, I'm healthy, and getting toned, and feeling better every day!

For Shakeology, my sugar cravings are gone!  And, I have a serious sweet tooth, and some days it was really bad.  I'd snack all day on candy and junk, and now, well, except for the occasional scoop of German ice-cream from the ice-cream truck, I don't really want it anymore.  Also, I find it easier to eat the recommended 5-6 meals a day, and my weight loss has been accelerated.  I WANT to make healthier food options because I would hate to sabotage what Shakeology does with putting crap back in my body.

For TurboFire, the workouts are FUN!  I'm excited to workout, even on the longer workouts days.  The time flies by so fast, and sometimes I want to do it twice a day because it's so much fun!  I'm seeing actual results, and not just my abs, but also my calves, arms, shoulders....everywhere.  I'm already down 2" in the waist!  How exciting is that?!?!?!?!

If you are interested in making a permanent transformation, contact me, and I can help get you started!

Until later!

Why I chose TeamBeachBody Products

Hello followers.  This is a very personal blog for me, one that I am now willing to share with all of you.

Some people that I know purposely make unhealthy choices, such as drink, smoke, use smokeless tobacco, eat primary junk food, refuse to exercise, etc.  I would often chat with my husband about these habits, and question: "Don't these people know what they are doing to their bodies?"  Well, the truth is, even though I don't have any obvious bad habits (smoking, excessive drinking, etc.) my bad habit was processed food.  I didn't realize it until the signs started adding up.

When I was in Afghanistan just last year, I was diagnosed with Hypertension.  When I got out of Afghanistan, I weighed 154.  I did drop to 151 naturally, but it was hard.  I had a PT test coming up, and I did get down to 149 (my max weight for the Army) but how I did it was very unhealthy.  I was taking diuretics to make weight!  Not good.  Then, I kind of blew off the weight until I about three months ago.  My weight started having a yo-yo effect, except it was creeping higher.  Every Tuesday I weigh myself, and where some weeks were good, (I'd be down 2 pounds or so.) most weeks weren't.  151, 153, 155, 153, 157, 156, 158, 159, 161, 159, and so on.

Well, my husband already did Insanity, and it worked for him, and I thought that because of a permanent injury (that I got from the Army) that I couldn't do it.  Well, I was wrong.  Until I injured my ankle a week ago, I had already completed month one, and had just started month two.  My energy levels went up.  My abs, calves, and arms were becoming defined.  And I wanted to work out.  My fitness me was born!

Now, things that I've tried in the past that didn't work:

1) Counting Calories - I ate what I wanted, just smaller portions.  Not for me because I was still consuming bad foods.

2) Wii U Fitness Evolved - While fun, I spent more time choosing programs to do rather than exercising.  I'd burn 100-120 calories an hour.  I needed more than that.

3) Riding my bike to work:  While this is a great idea, at the time it took me 7-10 minutes to get to work.  With it being really rainy this year, the bike made it to work only 1 week this year.  Not very effective.

So, on my l-o-n-g hard road to a better, more fit me, not only am I sticking with TeamBeachBody products, I'm also cutting processed foods.  Eating more whole foods.  With the exception of pasta, coffee, baking goods, and spices, I primarily stick to the outside aisles of the grocery store.  I'm slowly learning new recipes that are healthy, tasteful, and budget friendly, that I can make with foods that I purchase on the outside aisles.

Now that you know my story, you need to know that you can make the change too.  You can change your habits to become the new, more fit you.  YOU are NOT too late to change, nor too busy.  I'm an active duty Soldier, a college student, a mom of 4 boys, and a wife.  I still have time to travel, study, hang with the kids, and get everything done that I want to do in the day.  If I can change, you can to!

If you are serious about getting fit, becoming the best, fit you, check out my pages.

My Ultimate Reset!

And, as a bonus, if you have tried any of the Beachbody products, and want to make yourself a little extra money, ask me how.  I can help get you started.

Peach Upside-Down Cake, anyone?

Ok, so summer has officially started, and while peaches aren't my favorite fruit, I've got a craving for them lately.  I actually have a healthy craving for all sorts of summer fruits.  I've got frozen peaches and berries for smoothies, canned peaches for a quick desert, and I recently had a summer fruit salad.  mmmm.......

So, while pineapple upside down cake is my new current favorite dessert, I decided to apply an upgrade to the favorite and I've come up with Peach Upside Down Cake instead.

Before I share the recipe, I must admit, that while I'm trying hard to rid my cabinets of processed foods, when the Commissary has box cakes on sale for about 80 cents, and I have a coupon, I can't resist.  So, I picked up a French Vanilla Flavor, and stored it in the pantry for a few weeks before I decided what to do with it.  With a jar of Dole canned peaches (in the plastic jar), butter, brown sugar, and about cinnamon, I created a nice dessert.  You could, and I recommend, use fresh peaches, and any homemade recipe of vanilla cake, but this was quick and easy to put together in about 5 minutes.  So, here's how:

Preheat Oven to 350.

Ingredients:

1 stick of butter
1/2 cup of brown sugar
4 Tbs of cinnamon
1 jar Dole peaches (drained)
1 Vanilla Cake Mix
3 eggs
1 1/3 cup water
1/3 cup vegetable oil

In a 12" cast iron skillet, melt butter.  Add brown sugar and 2 Tbs cinnamon.  Stir over medium heat until well blended.  Remove from heat, set aside.  On drained peaches, toss with 1 Tbs cinnamon.  Arrange in skillet.  In bowl, combine cake mix, remaining cinnamon, eggs, water and oil.  Pour into pan.  Bake for 35-40 minutes until a toothpick inserted in center comes out clean.

This can be served warm with a scoop of vanilla ice-cream, or cooled with whip cream.  (My mixer finally died in the process, so we will just enjoy it plain.)

Enjoy this dessert and may it become one of your summertime favorites!

Perfect Pumpkin Pancakes

So, after searching the Google, Pinterest and AllRecipes.com high and low, I could not find an pumpkin pancake recipe that would either use all of my remaining pumpkin from last fall, or be compatible with ingredients that I have on hand, so I decided to make up my own.  And, for the first time, I came up with a quick bread recipe all on my own.  Now, for everyone that knows me, my homemade from scratch dishes normally include sauces, soups, and skillet dishes.  But, this one time only, I created my very own pancake....and not only a regular pancake, but pumpkin pancakes at that.  So, let's get started, shall we?

Here's what you'll need:

2 cups all purpose flour
1/4 cup sugar
1/4 cup brown sugar
1 tsp salta
2 tsp baking powder
1 tsp cinnamon
2 tsp pumpkin pie spice
1 cup pumpkin puree (I used fresh.)
2 eggs
1/3 cup vegetable oil
1 1/4 cup milk (I used skim.)

In large bowl, combine all dry ingredients.  In a separate bowl, combine all wet ingredients, then combine with dry ingredients.  Cook on a non-stick griddle, pre-heated to a medium heat.  Serve if you like, with a pat of butter, and syrup of your choice.  I prefer butter pecan syrup, but I didn't have any, so I used maple syrup, and it was just as yummy!

Now, keep in mind, this is perfect for a family of 6 or larger, since I got more than 18 3-4" pancakes, so   if your family is small, I suggest freezing leftovers as individual serving sizes (with wax paper in-between pancakes) so that you can microwave them later for a quick breakfast, or cooking them whenever you have guests.

I wish I had pictures to share with ya'll, but they were gone so fast, there was no time to stop and take a picture.

So, feel free to save this recipe, modify it as your own, and share it with your friends and family.  And as always, continue to Live Well!

Go to a Concert

So, here at Living Well, we scored free tickets to see Bon Jovi in Munich.  It was by far, the best concert that I've ever been too!

So, what's my advice to you:  Take advantage of free concerts provided by the Army.  You may or may not like the artist, but there is nothing like live music!  And who knows, you may even hear a song or two that you'll like.

Every concert that I've been to I've gone to for free.  I've either been a guest, scored free tickets, or it was a USO tour (Toby Keith).

Now, if you haven't been as lucky as me, there are many places that you can score tickets for a fairly cheap price.  If we would have purchased the tickets, it would have been 67.50 Euro per seat, which isn't too bad.  You can check your USO or SATO or if you are in the states TicketMaster.  And if you are lucky, you can always try to win tickets from your radio station.

The idea is, shop around for that performer that you really, really want to see, and then shop around for tickets.  Most performers list their tour dates and cities online, and you can plan in advance on who you want to see, and where you want to go to see them.  Unless you really want to pay for center stage, you get the same experience a few rows back, and sometimes an even better experience simply because you can see the entire stage.

Once you have your tickets, plan your trip wisely.  Plan on the closest parking areas to be full within 2 hours or so before the show is due to start.  We arrived in Munich a little more than an hour before show time, drove around an hour before we eventually found parking.  Lucky us, the cover band didn't start until an hour later, and Bon Jovi came on an hour after that, so we still had two hours to spare.

Go to the bathroom as soon as you get there.  Believe me, when I say this, but the line to the women's restroom must have been a mile long.  To be prepared, bring along a to-go Charmin, and hand sanitizer.  Both these things I wish I had with me.

If the venue allows, bring your own drinks and snacks.  I've found out that I could have brought snacks with me.  Also, bring a camera.  You'll want to remember this, especially if it's a dream concert.  And if budget allows, bring money for souvenirs.  My budget did not allow; however, I did do my own research the morning after, and I can purchase a 5 x 7 photograph taken by the band's personal photographer for only $10.

The main thing to remember is: go and have fun.  Going to a concert is a fun experience.  You are there to have fun.  So, go, pick a performer that you want to see, save money, plan well in advance, and have a great time!  I know I did!

Taco Salad

Have you ever gotten a taco salad from Taco Bell and thought: "There has to be healthier option."  Many people who are trying to eat healthier often times find themselves in a fast food restaurant thinking, "Hey, if I get myself a salad, it'll be a healthier option, right?"  WRONG.  In most cases, the salads are not a healthier option.  In fact, a Taco Bell Taco Salad is over 700 calories!  And you are thinking, "What?"  Yep.  Well my friends, I have a recipe that will make a yummy taco salad for under 500 calories per serving, and it's easy on the wallet too!

And, if I had my memory stick for my camera (which suddenly disappeared one day), I would add a pic, but I'm just gonna share the recipe here.  So, grab your cast iron skillet, your spouse, and get in the kitchen.

Here's what you'll need:

1 lb 93% ground sirloin
4 slices bacon
romaine lettuce (either 1 head, or 1 package romaine hearts)
roma tomatoes
1 english cucumber
1 can summer crisp corn, rinsed
1 can bush's black beens, rinsed
1/2 block monterey jack cheese, shredded
1 med red onion
3 garlic cloves
Santitas Chips (5-6 per serving)

Seasonings:
Taco Seasoning, or the following:
cumin
cilantro
oregano
chili powder
smoked paprika
salt and pepper
(all seasonings are to taste)
red pepper flakes (optional)
Hot Sauce (optional)

Ranch Dressing (I used Wishbone brand, but you can use whatever brand you like.)
Salsa (Optional)

Ok, so before you do anything, you want to heat your cast iron skillet before adding any ingredients.  While heating pan, also heat the pan that you are gonna cook the bacon in.  You'll want to cook the bacon extra crispy, so that when it cools, you can crumble it easily.  So, cook and crumble bacon and set aside.

So, to make this go a lot quicker, grab your spouse and have him/her put together the vegetable salad.  You'll need the lettuce, tomatoes, cucumber, beans & corn.  The chunkier the vegetables, the better.

Now, while the vegetable salad is getting prepped, you are gonna brown your onion, garlic and meat.  You can then add your taco seasoning and cook as per directions, or use a combination of the remaining spices to create a unique taco taste of your own.

Once meat is brown, and vegetable salad is put together, you are gonna layer the salad as follows:

5-6 Chips
Meat Mixture
A heaping serving of salad greens
A drizzle of ranch dressing
a small handful of cheese
a very small handful of bacon crumbles

That's it!  I opted for the Ranch dressing instead of sour cream and salsa to cut on calories.  Trust me, you have plenty of taste without it, and I really didn't miss it at all.  With everything added, you have a very tasty Taco Salad for under 500 calories.  It was 476 calories to be exact, and that is WAY better than over 700 calories from Taco Bell.  This recipe serves 6-8 people depending if you are serving a household of kids like I do, or a mixture of kids and adults.

So, the next time you are at Taco Bell, and you are trying to watch what you eat, then opt for the chicken soft tacos.  No more than two.  If you eat more than that, then you might as well get the Taco Salad.

Do your body, and your wallet a favor, and cook something you love at home.  You'll be surprise how many calories you cut, and how fat your wallet gets to be.  Not to mention, it's fun cooking with your spouse.  You are spending quality time with your significant other, and creating a masterpiece that you'll both love to eat.

Next week at LW: Finishing the series of What Every Kitchen Should Have.  I apologize for not completing it earlier, but I'm back in full swing, and should be back here every week.
